Hearty Hamburger Soup (Easy One-Pot Dinner)

Ingredients
  

  • ½ tbsp olive oil
  • ½ cup chopped onion
  • 1 cup chopped celery or another vegetable of your choice (carrots work well)
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 1 can tomato paste
  • 1 28 oz can diced tomatoes, with juices
  • 8 cups beef broth
  • 4-6 large potatoes, peeled and diced
  • 1-2 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions
 

  • In a large saucepan, brown the ground beef with the onion over medium heat. Near the end of the cooking time, add the minced garlic and cook for another 1–2 minutes, until fragrant. Drain excess fat if needed, then remove from heat.
  •  Add the can of tomato paste, canned tomatoes, and broth. Give it a good stir
  • Add the prepared potatoes and any remaining vegetables to the pot. Stir in the seasoning blend until everything is well combined.
  • Return the pot to the heat and bring the soup to a boil. Reduce the heat to a gentle simmer and cook until the vegetables are tender, about 20–30 minutes.

Notes

Ingredient swaps:
Celery can be replaced with carrots, green beans, or frozen mixed vegetables.
Seasoning tip:
Start with 1 teaspoon of Italian seasoning, then adjust to taste near the end of cooking.
Storage:
Leftovers keep well in the fridge for 3–4 days and freeze for up to 3 months.
